Breakfast in a Biscuit

A nice easy breakfast - not too sweet.

(Gluten Free) Breakfast in a Biscuit

Wet ingredients:
3 bananas
2 eggs
1 tsp vanilla essence
1 tbsp honey
1/4 cup milk

Mix in a food processor or with beater until fluffy

Now add the dry ingredients:
2 cups quick cooking grain flakes (oat, rice, quinoa, amaranth, anything you'd use for instant porridge, etc - I've even successfully used a muesli mix)
1/2-3/4 cup mixed nuts and dried fruit
and 1 tsp cinnamon.

Mix well and leave for a few minutes while the oven heats and the dried grain flakes get nice and moist. Use a tablespoon to drop onto biscuit trays and flatten slightly. Bake 20 min at 175 deg C. swapping trays top to bottom after 10 min. Makes 24.

1 biscuit - 111 calories, 3 gm fat (0 gm saturated fat), 20 gm carbohydrate, 2 gm dietary fibre, 3 gm protein

Here's a stupid question: are "quick cooking grain flakes" like instant oatmeal, or are they like breakfast cereal that you pour milk over and eat?

instant oatmeal - anything that you'd make porridge out of in 5 min in the microwave... I don't eat oats but I make instant porridge out of quinoa and rice flakes and that's what i used for these biscuits - which by the way I had three of for breakfast this morning with a glass of milk and I was FULL - didn't feel hungry again for about 4 hrs.
